Lime Chicken….A Low Fat Amazing Dinner

This is my favorite recipe! The taste is amazing, its a great light summer dinner.

Items Needed: (This is for a dinner for 2 people, add more chicken breast for more people)

Boneless Skinless Chicken Breast (usually 2-4 depending on the size)

1 Container Non-fat Plain Yogurt

1 Large Red Onion

Fresh Cilantro

1 Avocado

2 Roma Tomatoes

4 Limes

First we must make the marinate for the Chicken:

In a food processor add the Yogurt, a quarter of the red onion, a hand full of fresh cilantro, and the juice from 2 of the limes. Blend until smooth and pour over chicken breast and place in the refrigerator for at least 2 hours.

Now for the Salsa to top the Chicken:

Combine in a bowl diced Onion, tomatoes, avocado, and another hand full of fresh cilantro. Then squeeze the last 2 limes over your mixture. I like to make the salsa at the same time as the marinade and let it sit in the refrigerator while the chicken marinates, this way all of the flavors have time to mix together.

When you are ready to eat:

Place chicken on the grill and feel free to spoon more marinade over the chicken while it cooks. Once the chicken is full cooked place it on the plate and top with the salsa. I usually accompany the Lime chicken dinner with either fresh green beans or roasted red potatoes.
