Portobello Mushroom Sandwiches

A great dinner sandwhich. This Recipe is based on cooking for 2.

2 Large Portobello Mushroom Caps

Olive Oil

Minced Garlic

Fresh Basil

Pepper

Low Fat Cream Cheese

Focaccia Bread

Your favorite sandwich toppings (I use Red Onions, Romain Lettuce, Tomatoes)

For the mushrooms combine 2 tablespoons of Olive Oil, about 3 leaves of basil chopped, and 1 tablespoon of minced garlic in a small bowl. Wash the mushrooms and place on foil (fold the sides of the foil to prevent the oil from spilling out the sides). Spread the mixture over both sides of the mushrooms. Place mushrooms on foil onto the grill. Grill about 5-7 min. per side.

For the spread. Place 3 oz. of cream cheese into a bowl and place in the microwave for about 15 – 25 seconds to soften. Add in a few spinkles of pepper, and three leaves of basil chopped.

Now its time to put these wonderful sandwiches together.
